Instructions

  1. Prepare the Filling: In a bowl, combine the chopped fresh spinach, crumbled feta cheese, grated Parmesan cheese, salt, and pepper. Mix gently until all ingredients are evenly incorporated.
  2. Prepare the Puff Pastry: Roll out the thawed puff pastry sheet on a lightly floured surface to smooth out any creases. Cut the pastry into squares approximately 2 to 3 inches in size, depending on desired bite size.
  3. Assemble Bites: Place a small spoonful of the spinach and feta filling in the center of each puff pastry square. Fold or pinch the edges to seal, creating small parcels or triangles. Ensure the edges are well sealed to prevent filling leakage during baking.
  4. Apply Egg Wash: Using a brush, lightly coat the tops and edges of each pastry bite with the beaten egg. This will give them a beautiful golden-brown finish when baked.
