Puff Pastry:

  • 2 puff pastry sheets (thawed)

  • 1 small yellow onion, finely chopped

  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp garam masala
  • Pinch salt and pepper to taste
  • 2 tsps mustard seeds

Instructions

  1. Prepare the filling: Heat a pan over medium heat and add mustard seeds. Once they start to crackle, add chopped onions, garlic, and grated ginger. Sauté until the onions turn translucent and fragrant.
  2. Cook potatoes and spices: Add the cubed potatoes to the pan and stir well. Cook for a few minutes then add cumin powder, coriander powder, garam masala, salt, and pepper. Mix everything thoroughly to coat the potatoes with the spices.
  3. Add peas and cook through: Stir in the thawed peas, cover the pan, and cook on low heat until the potatoes are tender, stirring occasionally to prevent sticking. Remove from heat and let the filling cool.
  4. Preheat oven and prepare pastry: Preheat your oven to 400°F (200°C). Roll out the thawed puff pastry sheets on a lightly floured surface and cut them into squares large enough to form baskets in your muffin tin or on a baking tray.
  5. Assemble the baskets: Gently press the puff pastry squares into the muffin tin cups or shape into basket forms. Fill each pastry basket with the spiced potato filling evenly.
  6. Apply egg wash: Brush the edges of the pastry with the beaten egg to help them turn golden and crisp during baking.
  7. Bake: Place the filled baskets in the preheated oven and bake for 15-20 minutes, or until the pastry is puffed up and golden brown.
