Instructions
- Prepare the Puff Pastry: Preheat your oven to 375°F (190°C). Roll out the thawed puff pastry sheet on a lightly floured surface to smooth out creases and gently shape it into a rectangle or square to fit your baking tray. Transfer the pastry to a parchment-lined baking sheet.
- Mix the Almond Filling: In a bowl, cream together the softened butter and granulated sugar until smooth and fluffy. Beat in the egg and almond extract until fully combined. Fold in the almond flour to create a smooth almond cream.
- Assemble the Tart: Spread the almond filling evenly over the puff pastry, leaving about a 1-inch border around the edges. Arrange the fresh raspberries evenly on top of the almond cream layer.
- Bake the Tart: Bake in the preheated oven for 25-30 minutes, or until the puff pastry is golden and puffed, and the almond filling is set and lightly browned.
- Cool and Serve: Remove the tart from the oven and allow it to cool slightly on the baking sheet. If desired, dust the tart with powdered sugar before slicing and serving.
