Ingredients
Scale
Protein and Broth
- 3–4 boneless skinless chicken breasts
- 4 cups low-sodium chicken broth
Vegetables and Aromatics
- 3 cloves fresh garlic, minced
- 1-inch piece of fresh ginger, grated or minced
- Bell peppers (to taste), sliced
- Carrots (to taste), thinly sliced
Liquids and Seasonings
- 1 cup coconut milk
- Juice of 1 lime
- Low-sodium soy sauce (to taste, approximately 2 tablespoons)
Instructions
- Prepare the aromatics: Mince the garlic and grate or finely chop the ginger to release their flavors. Set aside while you prepare the other ingredients.
- Cook the chicken: In a large pot over medium heat, add a small amount of oil and then gently cook the chicken breasts until they are just cooked through, about 5-7 minutes per side depending on thickness. Remove the chicken and set aside.
- Sauté aromatics and vegetables: In the same pot, add the garlic and ginger and sauté until fragrant, about 1-2 minutes. Add sliced bell peppers and carrots and cook for a further 3-4 minutes until they begin to soften.
- Add broth and coconut milk: Pour in the chicken broth and coconut milk, stirring to combine. Bring the mixture to a gentle simmer.
- Shred the chicken: While the broth simmers, shred the cooked chicken breasts into bite-sized pieces using two forks.
- Combine and flavor: Return the shredded chicken to the pot. Add lime juice and low-sodium soy sauce to taste. Stir well and let simmer for another 5 minutes to meld the flavors and heat through.
- Serve: Taste and adjust seasonings as needed. Serve hot, garnished with fresh herbs if desired, for a satisfying and flavorful Thai-inspired chicken soup.
Notes
- Use low-sodium chicken broth and soy sauce to keep sodium levels moderate.
- You can substitute chicken breasts with thighs for a juicier texture.
- Adjust vegetables based on what you have on hand; mushrooms and spinach work well.
- For a spicier kick, add sliced fresh chili or a dash of chili flakes.
- Letting the soup simmer gently helps flavors meld without toughening the chicken.
