Instructions

  1. Preheat the Pan: Heat a non-stick frying pan over medium heat to prepare for cooking the eggs.
  2. Cook the Eggs: Crack the 3 eggs into the pan and cook them gently until the whites are set but the yolks are still slightly runny, or to your preferred doneness.
  3. Add Passata: Spoon 1 tablespoon of passata over the eggs, distributing it evenly to build the pizza base flavor.
  4. Add Toppings: Sprinkle 60g of grated reduced-fat cheese over the eggs and passata, then place the salami slices on top of the cheese.
  5. Melt the Cheese: Cover the pan with a lid or foil and reduce the heat to low. Allow the cheese to melt and the toppings to warm through for about 2-3 minutes.
  6. Finish with Herbs: Remove the lid, sprinkle mixed herbs over the eggs, and carefully slide the pizza eggs onto a serving plate.
