Description

This Keto Bread recipe is a delicious, yeast-free, low-carb alternative to traditional bread, perfect for those following a ketogenic diet. Made with almond flour and using simple ingredients, it provides a moist and flavorful loaf without the need for yeast or long rising times.

Ingredients

Scale

Dry Ingredients

  • 1 3/4 cups almond flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda

Wet Ingredients

  • 5 large eggs
  • 1/4 cup + 1 tablespoon olive oil, melted
  • 1 tablespoon maple syrup (optional, see notes)
  • 1 teaspoon apple cider vinegar

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and prepare a standard loaf pan by greasing it lightly or lining it with parchment paper.
  2. Mix Dry Ingredients: In a medium mixing bowl, whisk together almond flour, salt, and baking soda to ensure even distribution of the leavening agent.
  3. Combine Wet Ingredients: In a separate large bowl, beat the eggs, then add the melted olive oil, maple syrup, and apple cider vinegar. Mix well until fully combined.
  4. Combine Mixtures: Slowly add the dry ingredients to the wet ingredients, stirring gently until a thick batter forms with no lumps.
  5. Pour Batter: Transfer the batter into the prepared loaf pan and smooth the top evenly with a spatula.
  6. Bake the Bread: Bake in the preheated oven for 30-40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Cool and Serve: Remove the bread from the oven and allow it to cool in the pan for about 10-15 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

  • If you prefer a slightly sweeter bread, include the tablespoon of maple syrup; omit it for stricter keto compliance.
  • Make sure to use fresh baking soda to ensure proper rise.
  • This bread is best stored wrapped in plastic or in an airtight container and can be refrigerated for up to 5 days or frozen for up to 1 month.
  • The addition of apple cider vinegar helps to activate the baking soda for better rise and texture.
