Description

This Homemade Funfetti Marshmallow Popcorn Treats recipe is a delightful twist on classic popcorn treats, combining buttery popcorn with gooey marshmallows, a hint of vanilla, cake batter protein powder for added flavor and nutrition, and colorful funfetti sprinkles for a festive touch. Perfect for parties, snacks, or a sweet treat, these chewy and crunchy bites are easy to make and irresistibly fun.

Ingredients

Scale

Popcorn Base

  • 3 tbsp butter
  • 7 cups popcorn (popped, unbuttered)

Sweet Mix

  • 50 regular size marshmallows
  • 1 tsp vanilla extract
  • 1 scoop cake batter protein powder
  • Funfetti sprinkles (to taste, approximately 2-3 tbsp)

Instructions

  1. Prepare the popcorn: Pop your popcorn using your preferred method until you have 7 cups of plain, unbuttered popcorn. Set aside in a large mixing bowl.
  2. Melt the butter and marshmallows: In a large saucepan over low heat, melt the 3 tablespoons of butter. Add the 50 marshmallows and stir continuously until completely melted and smooth.
  3. Add vanilla and protein powder: Remove the saucepan from heat and stir in 1 teaspoon of vanilla extract and 1 scoop of cake batter protein powder, mixing thoroughly to combine.
  4. Combine with popcorn: Immediately pour the melted marshmallow mixture over the popcorn in the large bowl. Use a spatula or wooden spoon to gently fold the mixture into the popcorn until evenly coated.
  5. Add funfetti sprinkles: Sprinkle the funfetti sprinkles over the coated popcorn and fold gently to distribute them throughout the mixture.
  6. Cool and set: Transfer the mixture to a baking sheet lined with parchment paper. Press evenly into a flat layer using a spatula or your hands (lightly buttered or greased). Allow to cool and set completely at room temperature, about 30 minutes.
  7. Serve: Once set, cut into squares or break into clusters for serving. Enjoy as a festive snack or party treat!

Notes

  • Use freshly popped popcorn for the best texture.
  • Butter the spatula or your hands before pressing the mixture to prevent sticking.
  • For extra flavor, you can add a pinch of salt to balance the sweetness.
  • Store in an airtight container at room temperature for up to 3 days to maintain freshness.
  • Optionally substitute the cake batter protein powder with vanilla protein powder or omit if desired.
