Filling
- 2 cups (240g) peeled & diced apples (about 2 medium apples)
- 1 teaspoon cornstarch
- 2 teaspoons pure vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 cup (100g) granulated or brown sugar
Egg Wash + Topping
- 1 large egg
- 1 Tablespoon (15ml) milk (any kind)
- Optional: 1/2 cup (145g) salted caramel, for drizzling

- Prepare the filling: In a bowl, combine the peeled and diced apples with cornstarch, pure vanilla extract, ground cinnamon, and sugar. Mix thoroughly to coat the apples evenly with the spices and sugar, allowing the cornstarch to thicken the filling during baking.
- Prepare the puff pastry: If using homemade rough puff pastry, roll it out to the thickness of about 1/8 inch. For store-bought puff pastry, ensure it’s thawed completely as per package instructions. Cut the pastry into evenly sized squares suitable for turnovers, typically about 4 to 5 inches per side.
- Assemble the turnovers: Place a generous spoonful of the apple filling in the center of each pastry square, spreading it slightly but leaving enough room to seal the edges. Moisten the edges of the pastry with water or egg wash to help them stick, then fold each square diagonally to form a triangle and press the edges firmly with a fork to seal.
- Apply egg wash: Beat the egg together with the milk to create an egg wash. Brush the top of each assembled turnover with the egg wash to achieve a golden and shiny crust when baked.
