Ingredients
Scale
Eggs
- 12 whole eggs
Filling
- 2 whole avocados
- 3 tablespoons light mayo
- 2 tablespoons dijon mustard
- 1 teaspoon garlic salt
- ½ teaspoon salt
- ½ teaspoon black pepper
Coloring
- 3 drops green food coloring
- 15 drops red food coloring
- 15 drops blue food coloring
Instructions
- Boil the Eggs: Place the 12 whole eggs in a large pot and cover with cold water. Bring the water to a boil over medium-high heat. Once boiling, remove the pot from heat, cover it, and let the eggs sit for 12 minutes. Then, transfer the eggs to an ice bath to cool completely.
- Prepare the Filling: Peel the cooled eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a mixing bowl. Add the 2 whole avocados, 3 tablespoons of light mayo, 2 tablespoons of dijon mustard, 1 teaspoon garlic salt, ½ teaspoon salt, and ½ teaspoon black pepper to the yolks. Mash and mix everything together until smooth.
- Add Food Coloring: To create the Halloween effect, divide the avocado and yolk mixture into three separate bowls. Add 3 drops of green food coloring to the first bowl, 15 drops of red food coloring to the second bowl, and 15 drops of blue food coloring to the third bowl. Mix each bowl thoroughly to evenly distribute the color.
- Fill the Eggs: Using a spoon or piping bag, carefully fill each egg white half with the colored avocado filling. Distribute the differently colored fillings among the egg halves to create a vibrant, spooky assortment.
- Serve: Arrange the deviled eggs on a serving platter and refrigerate until ready to serve. Enjoy these colorful, creamy treats as a perfect Halloween party appetizer.
