Description

This Ground Beef Stroganoff is a comforting and easy-to-make dish featuring lean ground beef cooked with onions and spices, simmered in a savory mushroom gravy, and finished with creamy sour cream. Served over wide egg noodles, it’s a classic, hearty meal perfect for any day of the week.

Ingredients

Scale

Ground Beef Mixture

  • 1 pound lean ground beef
  • 1 small onion, finely diced
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon pepper

Gravy & Sauce

  • 1 packet (0.87 oz) brown gravy mix
  • 1 cup cold water
  • 1 can (10 oz) cream of mushroom soup
  • ½ cup sour cream
  • 2 teaspoons dried parsley

Pasta

  • 1 bag (12 oz) wide egg noodles

Instructions

  1. Cook the Ground Beef: In a large skillet over medium heat, brown the lean ground beef until fully cooked, breaking it up into crumbles as it cooks. Drain any excess fat and add finely diced onion, garlic powder, onion powder, salt, and pepper. Stir and cook until onions are softened, about 3-4 minutes.
  2. Prepare the Gravy: In a separate bowl, mix the brown gravy packet with 1 cup cold water until smooth. Pour the mixture into the skillet with the beef and onions, followed by the can of cream of mushroom soup. Stir well to combine all ingredients.
  3. Simmer and Thicken: Bring the mixture to a simmer and cook for about 5-7 minutes, stirring occasionally, until the sauce thickens and flavors meld together.
  4. Add Sour Cream and Parsley: Remove the skillet from heat and stir in the sour cream and dried parsley until fully incorporated, creating a rich and creamy sauce.
  5. Cook the Egg Noodles: Meanwhile, bring a large pot of salted water to a boil. Add the wide egg noodles and cook according to package instructions (usually 7-9 minutes), until tender but still firm to bite (al dente). Drain the noodles well.
  6. Combine and Serve: Plate a generous portion of the cooked egg noodles and spoon the ground beef stroganoff sauce over the top. Garnish with additional parsley if desired and serve immediately.

Notes

  • Use lean ground beef to reduce excess fat and calories.
  • If sour cream is not available, you can substitute with plain Greek yogurt for a slightly tangier flavor.
  • For a thicker sauce, reduce the amount of water or simmer longer.
  • Fresh parsley can be used instead of dried for a brighter herb flavor.
  • Leftovers keep well in the refrigerator for 2-3 days and can be reheated gently on the stovetop or microwave.
