For the Sandwich

  • 2 slices brioche bread
  • 2 tbsp butter
  • 2 tbsp Dijon mustard
  • 3 oz grilled chicken breast, sliced 3/4″ – 1″ thick
  • 2 slices mozzarella cheese
  • 2 tbsp Divina Caramelized Onion Jam
  • Salt and pepper to taste

Instructions

  1. Prepare the Bread: Spread butter evenly on one side of each brioche slice. This will help in creating a golden, crisp exterior when grilled.
  2. Toast the Bread: Heat a skillet over medium heat. Place the brioche slices butter-side down and toast until golden brown, about 2-3 minutes. Remove from the skillet and set aside.
  3. Assemble the Sandwich: Spread Dijon mustard on the untoasted side of one brioche slice. Layer the sliced grilled chicken evenly on top, then add the mozzarella cheese slices. Spread the Divina Caramelized Onion Jam on the other slice of brioche and place it jam-side down over the chicken and cheese to complete the sandwich.
  4. Grill the Sandwich: Return the assembled sandwich to the skillet over medium heat. Press down gently with a spatula and cook for 3-4 minutes until the mozzarella starts to melt and the bread becomes crisp and golden. Carefully flip the sandwich and grill the other side for another 3-4 minutes.
