Quick to make and full of flavor, it’s a hearty, satisfying meal perfect for any night of the week.

Ingredients

Scale

Steak Bites

  • 1 lb sirloin steak, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste

Potatoes

  • 1 lb baby potatoes, halved or quartered
  • 1 tbsp butter
  • Salt and pepper, to taste

Garnish

  • Fresh parsley, chopped

Instructions

  1. Prepare the Potatoes: Start by halving or quartering the baby potatoes to ensure even cooking. Season them with salt and pepper. In a large skillet over medium heat, melt 1 tablespoon of butter and add the potatoes. Cook them, stirring occasionally, until they are golden and crispy on the outside and tender inside, about 15-20 minutes. Remove the potatoes from the skillet and set aside.
  2. Cook the Steak Bites: In the same skillet, add 1 tablespoon of olive oil and increase the heat to medium-high. Add the bite-sized sirloin pieces, seasoned with salt and pepper. Sear the steak bites until they develop a brown crust on all sides and reach your desired doneness, about 3-4 minutes per side depending on thickness. Remove the cooked steak bites from the skillet and set aside with the potatoes.
  3. Make Garlic Butter Sauce: Reduce the heat to medium and add the remaining 2 tablespoons butter to the skillet. Once melted, add the minced garlic, dried thyme, and dried rosemary. Stir frequently and cook until the garlic is fragrant and lightly golden, about 1-2 minutes. Be careful not to burn the garlic.
  4. Combine and Serve: Return the steak bites and potatoes to the skillet, tossing them gently in the garlic butter sauce to coat evenly. Cook together for another 1-2 minutes to let the flavors meld. Remove from heat and garnish with freshly chopped parsley before serving.

Notes

  • Use a cast iron or heavy skillet for best searing results on the steak and potatoes.
  • If baby potatoes vary in size, cut into smaller pieces to ensure even cooking.
  • Adjust the amount of garlic based on your preference for stronger or milder flavor.
  • To make the recipe gluten-free, ensure no cross-contamination and use gluten-free seasoning.
  • For added heat, sprinkle red pepper flakes into the garlic butter sauce.
  • Make sure not to overcrowd the pan when searing steak bites to maintain a good crust.
