Instructions
- Prepare the Potatoes: Start by halving or quartering the baby potatoes to ensure even cooking. Season them with salt and pepper. In a large skillet over medium heat, melt 1 tablespoon of butter and add the potatoes. Cook them, stirring occasionally, until they are golden and crispy on the outside and tender inside, about 15-20 minutes. Remove the potatoes from the skillet and set aside.
- Cook the Steak Bites: In the same skillet, add 1 tablespoon of olive oil and increase the heat to medium-high. Add the bite-sized sirloin pieces, seasoned with salt and pepper. Sear the steak bites until they develop a brown crust on all sides and reach your desired doneness, about 3-4 minutes per side depending on thickness. Remove the cooked steak bites from the skillet and set aside with the potatoes.
- Make Garlic Butter Sauce: Reduce the heat to medium and add the remaining 2 tablespoons butter to the skillet. Once melted, add the minced garlic, dried thyme, and dried rosemary.
