Instructions
- Prepare the batter: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and cinnamon until well combined. In a separate smaller bowl, beat the egg, then stir in the milk, vanilla extract, and melted butter until smooth. Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Avoid overmixing to keep the fritters light.
- Add the peaches: Fold the diced fresh peaches carefully into the batter to distribute them evenly without breaking the fruit pieces.
- Heat the oil: In a deep skillet or heavy-bottomed pan, heat vegetable oil to approximately 350°F (175°C). The oil should be deep enough to allow the fritters to float while frying.
- Fry the fritters: Using a spoon or small scoop, carefully drop spoonfuls of batter into the hot oil. Fry in batches to avoid overcrowding.
