Ingredients
Scale
Vegetables
- 1/2 cup diced carrots
- 1/2 cup peas
Rice and Eggs
- 2 cups cooked rice (preferably day-old)
- 2 eggs, scrambled
Oils and Seasonings
- 2 tablespoons vegetable oil
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 1/4 teaspoon black pepper
Instructions
- Prepare the ingredients: Make sure the rice is cooked and preferably refrigerated overnight for the best texture. Dice the carrots and scramble the eggs in advance.
- Heat the oil: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.
- Cook vegetables: Add the diced carrots and peas to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.
- Incorporate eggs: Push the vegetables to the side of the pan. Pour the scrambled eggs into the cleared space and cook until they are just set, stirring gently to break them up.
- Add rice and season: Mix the cooked rice into the skillet, combining it with the vegetables and eggs. Pour in the soy sauce and sprinkle with black pepper, stirring continuously to evenly distribute the seasonings and heat through for about 3-5 minutes.
- Finish with sesame oil: Drizzle the tablespoon of sesame oil over the fried rice and give it a final stir to incorporate the nutty flavor before removing from heat.
- Serve hot: Plate the fried rice immediately to enjoy its full flavor and texture.
Notes
- Using day-old rice helps prevent soggy fried rice by ensuring the grains are dry and separate.
- Feel free to add other vegetables or proteins such as diced bell peppers, green onions, or cooked chicken for variation.
- Adjust soy sauce quantity to your taste preference or dietary sodium restrictions.
- For a spicier version, add a dash of chili flakes or sriracha sauce.
