Description

Enoki Beef Rolls are a delicious Japanese-inspired appetizer featuring thinly sliced beef wrapped around tender enoki mushrooms and yellow onion, cooked to perfection and served with a savory dashi-based sauce. This dish combines umami-rich flavors with a satisfying texture, making it an elegant yet easy-to-make treat perfect for any occasion.

Ingredients

Scale

Main Ingredients

  • 12 slices thinly sliced beef
  • 1 pack enoki mushrooms, split into 12 pieces
  • ½ small yellow onion, sliced
  • 2 large eggs

Sauce

  • 1 cup dashi broth (homemade or store-bought)
  • 2 tablespoons mirin
  • 3 tablespoons soy sauce
  • ½ tablespoon sugar
  • ¼ teaspoon black pepper

Garnish

  • 1 stalk green onion, diced
  • 1 tablespoon sesame seeds

Instructions

  1. Prepare the Filling: Begin by splitting the enoki mushroom pack into 12 pieces. Slice half a small yellow onion thinly. These will be used to create the flavorful filling inside the beef rolls.
  2. Assemble Beef Rolls: Lay one slice of thinly sliced beef flat. Place one piece of enoki mushroom and a small amount of sliced onion on top. Carefully roll the beef slice around the filling to form a compact roll. Repeat this process for all 12 slices.
  3. Cook the Rolls: Heat a pan or skillet over medium heat. Lightly beat the 2 large eggs and use them to help seal or mop the rolls if desired, or to add richness during cooking. Place the beef rolls seam-side down in the skillet and cook evenly, turning to brown on all sides until fully cooked through and caramelized, approximately 6-8 minutes total.
  4. Prepare the Sauce: In a small saucepan, combine 1 cup dashi broth, 2 tablespoons mirin, 3 tablespoons soy sauce, ½ tablespoon sugar, and ¼ teaspoon black pepper. Bring to a gentle simmer over medium heat and stir until the sugar dissolves, allowing the sauce to thicken slightly, about 3-4 minutes.
  5. Combine Rolls and Sauce: Add the cooked beef rolls into the simmering sauce and let them cook together for another 2-3 minutes to absorb the flavors, turning occasionally to coat all sides.
  6. Garnish and Serve: Remove the rolls from the sauce onto a serving dish. Sprinkle with diced green onion and toasted sesame seeds for added color and texture. Serve immediately while warm.

Notes

  • Use thinly sliced beef suitable for rolling, such as ribeye or sirloin, for the best texture.
  • Dashi broth can be made from instant powder or homemade for authentic flavor.
  • You can substitute mirin with a mix of sake and sugar if unavailable.
  • Ensure the beef rolls are sealed well to prevent the filling from falling out during cooking.
  • Serve with steamed rice or a simple salad to complete the meal.
