  • 2 tablespoons vegetable oil or any neutral oil

Instructions

  1. Prepare Ingredients: Ensure the jasmine rice is cold and preferably a day old to prevent clumping and achieve the best texture. Finely chop the green onion and beat the eggs until well combined.
  2. Heat Oil: In a large skillet or wok over medium-high heat, add 2 tablespoons of vegetable oil and heat until shimmering but not smoking.
  3. Cook Eggs: Pour the beaten eggs into the hot pan, gently scramble them until just set but still soft, then remove the eggs from the pan and set aside.
  4. Sauté Green Onions: Add the chopped green onions to the skillet and sauté briefly for about 1 minute to release their flavors.
  5. Add Rice: Add the cold jasmine rice to the pan, breaking up any clumps with the spatula. Stir-fry the rice for 2-3 minutes until heated through and slightly toasted.
