Description

This Easy to Decorate Halloween Buffalo Chicken Dip is a spicy, creamy appetizer perfect for Halloween parties. Made with tender chicken thighs, tangy buffalo sauce, and a trio of cheeses, it’s both flavorful and festive. Serve it with black tortilla chips for a spooky touch, making it a crowd-pleaser that’s as fun to look at as it is to eat.

Ingredients

Scale

Chicken and Sauce

  • 5 boneless skinless chicken thighs
  • 1 cup buffalo sauce

Cheese Mixture

  • 8 oz cream cheese, softened
  • ½ cup shredded fontina cheese
  • ½ cup shredded sharp cheddar cheese
  • 1 oz crumbled blue cheese or gorgonzola

Serving

  • Black tortilla chips

Instructions

  1. Cook the Chicken: In a skillet over medium heat, cook the chicken thighs until they are fully cooked and no longer pink in the middle, about 7-8 minutes per side. Remove from heat and allow to cool slightly.
  2. Shred Chicken: Using two forks, shred the cooked chicken into bite-sized pieces. Place shredded chicken in a mixing bowl.
  3. Prepare Cheese Mixture: In the mixing bowl with chicken, add the softened cream cheese, buffalo sauce, shredded fontina, and sharp cheddar cheeses. Mix thoroughly until the mixture is well combined and smooth.
  4. Assemble Dip: Transfer the mixture into an oven-safe baking dish, spreading it evenly. Sprinkle the crumbled blue cheese or gorgonzola evenly over the top.
  5. Bake the Dip: Preheat the oven to 375°F (190°C). Bake the dip for 20-25 minutes, or until the cheese is melted and bubbly, and the edges are slightly golden.
  6. Serve: Remove from oven and let cool for a few minutes. Serve warm with black tortilla chips for dipping, creating a festive Halloween presentation.

Notes

  • You can substitute chicken breasts if preferred.
  • If you like it spicier, add extra buffalo sauce or a dash of cayenne pepper.
  • Using black tortilla chips adds to the Halloween-themed presentation but regular chips can be used.
  • For an easier shred, cook chicken thighs in a slow cooker or Instant Pot beforehand if desired.
  • Make sure cream cheese is softened to ensure a smooth dip texture.
