Description

Zucchini Mixture

  • 2 lb zucchini (about 2 large or 5 medium), grated
  • 1 1/2 tsp fine sea salt, divided
  • 2 large eggs, lightly beaten
  • 1/2 cup chopped green onions

  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground black pepper

Instructions

  1. Prepare the Zucchini: Grate the zucchini using a coarse grater. Place the grated zucchini in a colander and sprinkle with 1 tsp of the sea salt. Let it sit for about 10 minutes to draw out excess moisture, then squeeze out as much liquid as possible using a clean kitchen towel or cheesecloth.
  2. Combine Ingredients: In a large bowl, mix the drained zucchini with the lightly beaten eggs, chopped green onions, remaining 1/2 tsp sea salt, flour, baking powder, and black pepper. Stir until the ingredients are well combined to form the batter.
  3. Heat the Pan: Heat a generous amount of olive oil in a large skillet over medium heat. The oil should be hot enough to sizzle when you drop in a bit of batter but not smoking.
  4. Form and Cook Fritters: Using a spoon or your hands, scoop out portions of the batter and flatten them gently into 2-3 inch patties. Carefully place them in the hot skillet, leaving space between each fritter. Cook for about 3-4 minutes per side or until golden brown and crisp, flipping carefully to avoid breaking.
  5. Drain and Serve: Remove the cooked fritters from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve warm, topped with sour cream or your favorite dip.
