Description
These crispy and flavorful Zucchini Fritters are a perfect way to enjoy fresh zucchini. Lightly seasoned and pan-fried to golden perfection, they make a delicious appetizer or side dish served with a dollop of sour cream.
Ingredients
Scale
Zucchini Mixture
- 2 lb zucchini (about 2 large or 5 medium), grated
- 1 1/2 tsp fine sea salt, divided
- 2 large eggs, lightly beaten
- 1/2 cup chopped green onions
Dry Ingredients
- 3/4 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp ground black pepper
For Cooking and Serving
- Olive oil, for sautéing
- Sour cream, to serve
Instructions
- Prepare the Zucchini: Grate the zucchini using a coarse grater. Place the grated zucchini in a colander and sprinkle with 1 tsp of the sea salt. Let it sit for about 10 minutes to draw out excess moisture, then squeeze out as much liquid as possible using a clean kitchen towel or cheesecloth.
- Combine Ingredients: In a large bowl, mix the drained zucchini with the lightly beaten eggs, chopped green onions, remaining 1/2 tsp sea salt, flour, baking powder, and black pepper. Stir until the ingredients are well combined to form the batter.
- Heat the Pan: Heat a generous amount of olive oil in a large skillet over medium heat. The oil should be hot enough to sizzle when you drop in a bit of batter but not smoking.
- Form and Cook Fritters: Using a spoon or your hands, scoop out portions of the batter and flatten them gently into 2-3 inch patties. Carefully place them in the hot skillet, leaving space between each fritter. Cook for about 3-4 minutes per side or until golden brown and crisp, flipping carefully to avoid breaking.
- Drain and Serve: Remove the cooked fritters from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve warm, topped with sour cream or your favorite dip.
Notes
- Grating and thoroughly squeezing out moisture from the zucchini is essential to prevent soggy fritters.
- You can add herbs such as dill or parsley for extra flavor.
- For a gluten-free version, substitute all-purpose flour with gluten-free flour blend.
- These fritters can be kept warm in a low oven (200°F) while you finish cooking the rest.
- Leftovers can be stored in the refrigerator and reheated in a skillet or oven for crispiness.
