Instructions

  1. Preheat the oven. Set your oven to 400°F (200°C) so it’s ready to roast the potatoes to crispy perfection.
  2. Prepare the potatoes. Wash and dry the small Yukon gold potatoes thoroughly. If they are on the larger side, cut them to roughly uniform bite-sized pieces to ensure even cooking.
  3. Melt the butter and mix with herbs. In a small bowl, combine the melted salted butter with the chopped fresh rosemary and smashed garlic cloves to infuse the butter with aromatic flavor.
  4. Toss the potatoes. Place the potatoes in a large mixing bowl, pour the rosemary butter mixture over them, and season generously with kosher salt and freshly ground black pepper. Toss well to coat all the potatoes evenly with the butter and seasoning.
  5. Arrange for roasting. Spread the potatoes in a single layer on a large baking sheet. Nestle the 3 rosemary sprigs among the potatoes for additional fragrance as they roast.
