Description

Country Apple Fritter Muffins combine the comforting flavors of classic apple fritters and moist muffins. Made with diced Granny Smith apples, warm spices, and a tender crumb, these muffins are topped with a sweet cinnamon streusel and finished with a smooth vanilla glaze for a delightful breakfast or snack treat.

Ingredients

Scale

For the Batter

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 1/2 cups diced Granny Smith apples, peeled

For the Topping

  • 1 cup all-purpose flour
  • 1/3 cup light brown sugar
  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/3 cup unsalted butter, softened

For the Glaze

  • 1 cup powdered sugar
  • 2 tablespoons whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract. In a separate bowl, whisk together the flour, baking powder, baking soda, kosher salt, ground cinnamon, and ground nutmeg. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the peeled, diced Granny Smith apples carefully to distribute evenly without overmixing.
  2. Make the Topping: In another bowl, combine the all-purpose flour, light brown sugar, granulated sugar, and ground cinnamon. Cut in the softened butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Set aside.
  3. Assemble the Muffins: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly. Spoon the batter evenly into the muffin cups, filling each about two-thirds full. Generously sprinkle the cinnamon sugar topping over each muffin batter portion for a crunchy, flavorful finish.
  4. Bake the Muffins: Place the muffin tin in the preheated oven and bake for 20 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  5. Prepare the Glaze: In a small bowl, whisk together the powdered sugar, whole milk, and vanilla extract until smooth and pourable. Adjust the consistency by adding a little more milk if too thick or more powdered sugar if too thin.
  6. Glaze the Muffins: Once the muffins are fully cooled, drizzle the glaze over the tops evenly. Allow the glaze to set for a few minutes before serving to achieve a perfect finish.

Notes

  • Use Granny Smith apples for a tart flavor that complements the sweetness of the muffins.
  • Ensure the butter and eggs are at room temperature for better mixing and texture.
  • Do not overmix the batter after adding flour to keep the muffins tender.
  • The glaze can be stored in the refrigerator and warmed slightly before use if it hardens.
  • Store muffins in an airtight container at room temperature for up to 3 days or freeze for longer storage.
