Description

This Cheese and Bacon Cob Loaf Dip is a deliciously creamy and savory appetizer perfect for parties and casual gatherings. Combining a blend of cream cheese, sour cream, mozzarella, cheddar, crispy bacon, and fresh green onions, it’s served warm inside a hollowed-out cob loaf, making it a crowd-pleaser that’s easy to share.

Ingredients

Scale

Dip Ingredients

  • 8 ounces cream cheese, softened
  • 8 ounces sour cream
  • 1 cup shredded mozzarella cheese, divided
  • ½ teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • 8 ounces bacon, cooked and chopped
  • ½ cup green onions, finely chopped

Bread

  • 1 loaf cob bread

Instructions

  1. Prepare the Cob Bread: Slice the top off the cob loaf and hollow out the inside, creating a bowl-like structure while leaving the crust intact to hold the dip.
  2. Mix the Dip Base: In a large bowl, combine the softened cream cheese and sour cream until smooth and creamy.
  3. Add Cheese and Seasoning: Stir in half of the shredded mozzarella, all the shredded cheddar cheese, and garlic powder into the cream cheese mixture until well combined.
  4. Incorporate Bacon and Onions: Fold in the cooked, chopped bacon and finely chopped green onions evenly into the dip mixture.
  5. Fill the Bread Bowl: Spoon the prepared dip mixture into the hollowed cob bread, smoothing the top.
  6. Top with Remaining Cheese: Sprinkle the remaining shredded mozzarella cheese evenly over the top of the dip.
  7. Bake the Dip: Preheat the oven to 350°F (175°C). Place the filled cob loaf on a baking sheet and bake for 25-30 minutes, or until the cheese on top is melted and bubbly.
  8. Serve Warm: Remove from oven and let cool slightly before serving so it can be easily scooped. Serve with the hollowed-out bread pieces or additional crackers and vegetables for dipping.

Notes

  • You can prepare the dip mixture ahead of time and refrigerate before baking.
  • For a spicier kick, add some chopped jalapeños or a dash of hot sauce to the dip.
  • Ensure bacon is drained well after cooking to avoid greasy dip.
  • This recipe can be tailored to use different cheese varieties like pepper jack or gouda for unique flavors.
  • Leftover dip can be stored covered in the refrigerator for up to 3 days and reheated in the oven.
