For the Bowls
- 2–3 medium potatoes
- 2 tablespoons olive oil, divided
- 500 grams lean beef mince
- Lettuce, shredded
- Cheese (dairy-free or regular), sliced or shredded as preferred
- Pickle slices
For the Burger Sauce
- 4 tablespoons mayonnaise
- 1 tablespoon ketchup
- 1 teaspoon mustard (Dijon or yellow)
- 1 teaspoon pickle juice (from the jar of pickles)
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
Instructions
- Prepare the Spice Mix: In a small bowl, combine smoked paprika, garlic powder, onion powder, dried oregano or mixed herbs, salt, and black pepper. Mix well and set aside for seasoning the beef mince.
- Cook the Potatoes: Preheat the oven to 200°C (400°F). Wash and dry the potatoes thoroughly. Cut them into bite-sized cubes or wedges. Toss the potato pieces with 1 tablespoon of olive oil, salt, and a pinch of pepper. Spread them evenly on a baking tray and roast in the oven for 25-30 minutes or until golden and crispy, turning once halfway through cooking.
- Cook the Beef Mince: While the potatoes roast, heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the lean beef mince to the skillet, breaking it apart with a spatula. Sprinkle the prepared spice mix over the mince and cook for 8-10 minutes, stirring regularly, until the beef is fully browned and cooked through. Remove from heat.
- Make the Burger Sauce: In a small bowl, combine the mayonnaise, ketchup, mustard, pickle juice, garlic powder, and smoked paprika. Whisk together until smooth and well blended. Adjust seasoning to taste if necessary.
- Assemble the Burger Bowls: In serving bowls, start with a base of roasted potatoes. Top with seasoned beef mince, shredded lettuce, cheese slices or shreds, and pickle slices.
