For the Bowls

  • 23 medium potatoes
  • 2 tablespoons olive oil, divided
  • 500 grams lean beef mince
  • Lettuce, shredded
  • Cheese (dairy-free or regular), sliced or shredded as preferred
  • Pickle slices

For the Burger Sauce

  • 4 tablespoons mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon mustard (Dijon or yellow)
  • 1 teaspoon pickle juice (from the jar of pickles)
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika

Instructions

  1. Prepare the Spice Mix: In a small bowl, combine smoked paprika, garlic powder, onion powder, dried oregano or mixed herbs, salt, and black pepper. Mix well and set aside for seasoning the beef mince.
  2. Cook the Potatoes: Preheat the oven to 200°C (400°F). Wash and dry the potatoes thoroughly. Cut them into bite-sized cubes or wedges. Toss the potato pieces with 1 tablespoon of olive oil, salt, and a pinch of pepper. Spread them evenly on a baking tray and roast in the oven for 25-30 minutes or until golden and crispy, turning once halfway through cooking.
  3. Cook the Beef Mince: While the potatoes roast, heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the lean beef mince to the skillet, breaking it apart with a spatula. Sprinkle the prepared spice mix over the mince and cook for 8-10 minutes, stirring regularly, until the beef is fully browned and cooked through. Remove from heat.
  4. Make the Burger Sauce: In a small bowl, combine the mayonnaise, ketchup, mustard, pickle juice, garlic powder, and smoked paprika. Whisk together until smooth and well blended. Adjust seasoning to taste if necessary.
