BLT Macaroni Salad combines all the flavors of your favorite BLT sandwich in a cool and creamy pasta salad. With crispy bacon, juicy tomatoes, fresh lettuce, and tender macaroni tossed in a tangy dressing, this dish is perfect for potlucks, picnics, or a refreshing summer side.

- 2 cups elbow macaroni
- 8 slices bacon, cooked and crumbled
- 1 cup cherry tomatoes, halved
- 1 cup romaine or iceberg lettuce, chopped
- 1/4 cup red onion, finely chopped
- 1/2 cup shredded cheddar cheese (optional)
- For the dressing:
- 3/4 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp white vinegar or lemon juice
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- Cook macaroni according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooked macaroni, crumbled bacon, cherry tomatoes, chopped lettuce, red onion, and cheese if using.
- In a small bowl, whisk together mayonnaise, sour cream, vinegar or lemon juice, Dijon mustard, salt, and pepper.
- Pour the dressing over the pasta mixture and toss until evenly coated.
- Refrigerate for at least 30 minutes before serving to let flavors meld.
- Garnish with extra bacon or fresh herbs if desired and serve chilled.
Notes
- Add the lettuce just before serving to keep it crisp.
- Use Greek yogurt in place of sour cream for a lighter version.
- This salad can be made ahead, but reserve some dressing to mix in before serving for freshness.
- Great with grilled meats or as a stand-alone lunch!
