Instructions
- Preheat the oven: Set your oven to 180°C (350°F) to ensure it’s properly heated for baking the tortilla quiche.
- Prepare the tortilla base: Lay the large flour tortilla flat on a baking tray or shallow ovenproof dish, creating a base for the quiche mixture.
- Create the egg mixture: In a bowl, whisk the 4 eggs thoroughly. Add the chopped spinach, halved cherry tomatoes, halved olives, sliced spring onions, and diced red bell pepper. Stir to combine all the ingredients evenly.
- Add cheese: Mix in the grated mature cheddar cheese and crumbled feta into the egg and vegetable mixture, ensuring an even distribution of the cheese.
- Pour and spread: Pour the egg and vegetable mixture over the flour tortilla, spreading it out evenly so it covers the entire surface of the tortilla.
- Bake: Place the tray in the preheated oven and bake for approximately 20-25 minutes. Bake until the egg mixture is fully set and the top is slightly golden.
- Garnish and serve: Once baked, remove from the oven, sprinkle fresh chives on top for added flavor, slice, and serve warm.
