Description

This Almond Pâté recipe is a creamy, flavorful spread made from raw almonds blended with fresh basil, garlic, olive oil, and a hint of lemon juice. It’s perfect as a dip or a topping for bread and crackers, offering a rich and vibrant taste with a slight kick from cayenne pepper.

Ingredients

Scale

Almond Pâté Ingredients

  • 1 cup raw unsalted almonds (do not soak)
  • 1 clove garlic
  • 1/4 cup olive oil
  • 1 cup fresh basil leaves
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1 dash cayenne pepper
  • 1/4 cup water

Instructions

  1. Prepare the Ingredients: Gather all ingredients including raw unsalted almonds, a clove of garlic, fresh basil leaves, olive oil, lemon juice, salt, cayenne pepper, and water.
  2. Blend Almonds and Garlic: Place the raw almonds and garlic clove into a food processor or blender. Pulse until the almonds are broken down into a coarse texture.
  3. Add Basil and Seasonings: Add the fresh basil leaves, lemon juice, salt, and cayenne pepper to the almond mixture.
  4. Add Olive Oil and Water: Pour in the olive oil and water to the blender to help create a smooth, spreadable consistency.
  5. Blend Until Smooth: Blend all ingredients together for about 1-2 minutes, stopping to scrape down the sides as needed, until the mixture is smooth and creamy.
  6. Adjust Consistency and Taste: If the pâté is too thick, add a bit more water or olive oil to reach your desired consistency. Taste and adjust seasoning with additional salt, lemon juice, or cayenne pepper as preferred.
  7. Serve or Store: Transfer the almond pâté to a serving bowl and enjoy immediately or refrigerate in an airtight container for up to 3 days.

Notes

  • Do not soak the almonds before blending to maintain the proper texture and flavor.
  • You can substitute fresh basil with other herbs like parsley or cilantro for a different flavor profile.
  • For a smoother pâté, blend for longer or add a bit more olive oil.
  • This pâté pairs wonderfully with fresh bread, crackers, or as a sandwich spread.
  • Store any leftovers in the refrigerator in a sealed container for up to 3 days to maintain freshness.
